It’s not a breakfast – it’s a summer / holiday reminder that cheers you up when it rains outside. It’s colorful, sweet and juicy; a great start of a busy day especially since it takes literally 5 minutes to make it.
I used Cantaloupe but of course, you can go with Galia or any other type of a melon. Just make sure it’s ripe otherwise, it won’t be sweet and soft! As for the topping, a sky is a limit – I used a bit of home-made granola, blueberries, raspberries and a tiny amount of maple syrup to make it super sweet.
- 1 cantaloupe
- 150 g nonfat Greek yogurt
- 1 tsp fresh raspberries
- 1 tsp fresh blueberries
- 1 tsp home made granola
- A bit of maple syrup
- Scoop out seeds from the center of your half cantaloupe.
- Fill the hole with a nonfat Greek yogurt.
- Add your magic ingredients on the top .
- Dig in!
